Crawfish Po’Boy (Affirmed in Part, Remanded in Part)

The crawfish po’boy is “superb,” “perfectly cooked,” an”fresh”-tasting, with a “crisp, flavorful, and well seasoned” batter that never “overpowers” the crawfish.” The dressing adds a “welcome brightness.” While the bread, imported from New Orleans, was “a wee bit stale,” the po’boy was overall “very good.” For the full review, see In re Willie’s Po’Boy, 7 Catt. 4 (2012).
