Parmesan-Crusted Salmon Over Cabana Rice (Remanded)

The salmon was “quite dry,” “overcooked,” and “underseasoned,” with a “leathery” Parmesan crust and a pineapple mango sauce. The cabana rice was “well cooked” and “sufficiently flavorful” but sat atop “extraneous” and “distracting” lettuce which “wilt[ed] considerably” under the heat of the rice and salmon.
